現為台北W飯店英國藉的行政總主廚Martin 從小定居於東南亞,之後前往英美國家接受完整的廚藝訓練,擅長歐洲料理,並以現有食材來呈現料理的原始面貌。

主廚Martin 曾在世界各地的五星級飯店工作,國際經歷讓他更能充分融合不同國界、不同領域的料理精華,激發其更多的創意,對美食佳餚有更豐富的詮釋。

自2010年被台北W飯店挖角重金禮聘擔任行政主廚一職,管理品牌餐廳the kitchen table 及紫艷中餐廳、宴會廳、酒吧及客房餐飲,帶領台北W飯店餐飲在國際上嶄露頭角。 

 

以下為邀請馬丁 麥高樂 (Martin Nail Macleod ) 師傅的訪談內容:

1)The bitter and sweet parts in your career.  And training process.

Martin:Sweet parts is when I see the talents succeeding, when they become the people they want to be.

Bitter is when I don’t manage to fulfill the satisfaction of our guests.

2)Your most memorable achievement or frustration.

Martin:Waking up every morning!

Just kidding, I tend to forget my memorable achievements, don’t know why. And I try to make frustration into a learning experience so that I don’t repeat mistakes.

3)Your current working condition.

Martin:The Best!!

I feel like a part of something so special here at W, a new hotel, where imagination and creativity is a part of the DNA, where we can strive for customer satisfaction with minimal parameters.

4)The required criteria for a good chef or the things he/she needs to know?

Martin:For a cook the requirements is to be able to cook well, and that is usually achieved through passion and commitment to learn. If you want to develop your skills further to become a Chef, then that chef needs to have management and organization skills to cover the non-food part of their duties. And did I mention imagination & some creativity?

5)The most delicious food or cuisine you have ever had?

Martin:Wow, that’s the toughest question yet! There is so much incredible food everywhere, wherever you travel. I think memorable meals are as much to do with the company you are with, friends and family can make any meal memorable!

6)Your long-term career goal at this moment

Martin:Tomorrow! One day at a time, when I am having so much fun every day, why focus on the distance?
